Heavenly Recipe - How to Use Sweet Potatoes for a Nourishing Soup
I love making soups! I never follow a recipe and always use leftovers or whatever ingredients I have on hand. I find that soups are one of the best ways to pack in a ton of nutrition all while being a very affordable way to feed a large family! For instance, if I have 2 sweet potatoes, it's definitely not enough to feed a family of 7, but in a soup it's more than enough! Speaking of sweet potatoes, that brings us to one of my favorite ways to use sweet potatoes in a soup! They are full o f vitamins, low glycemic, gluten free, and safe for people on many kinds of limited di ets! The other day I found 2 sweet potatoes in a package in the discount section of the grocery store. So I grabbed them up for a $1.13 and brought them back to the missions house and baked them to use the next day in a soup.
